On September 3rd the historic center of the ducal city will be transformed into an open-air gourmet restaurant for a thousand people. Guest star will be Norbert Niederkofler, who will work alongside the team of Parma Quality Restaurants: the tri-star chef, proponent of the “Cook The Mountain” philosophy will sign the dessert. The “Dinner of the Thousand” will have a beneficial purpose: the funds raised will be donated to Emporio Solidale Parma, which assists over a thousand families in difficulty. The context will always be that of “Settembre Gastronomico”, a great choral project for the promotion of the made-in-Parma product chains: Tuesday, September 3, the historic center of Parma will return to become a gourmet restaurant under the stars with a table 500 meters long between Piazza Garibaldi and Strada della Repubblica, ready to welcome a thousand guests. All with a charitable purpose: the “Cena dei Mille”, in fact, will contribute to raising funds for Parma’s Emporio Solidale.
Absolutely high level the quality of the gastronomic proposal, both for the excellence of the raw materials – the challenge consists in enhancing in an original way a unique heritage, ranging from the Parmigiano Reggiano DOP and Prosciutto di Parma DOP to the pasta, from the tomato to the Parma anchovies, to get to milk – both for the chefs involved, who for the occasion have all renounced any form of compensation. We start with the Parma Quality Restaurants team, headed by chef Enrico Bergonzi, which represents the best expression of Parma’s haute cuisine: they include the starred chefs Massimo Spigaroli, who is also President of the Parma UNESCO Creative City of Gastronomy Foundation, and Terry Giacomello.
Alongside the consortium Parma Quality Restaurants will work a representation of Chef To Chef, the consortium of the 50 best chefs in Emilia-Romagna: to embellish the “Cena dei Mille”, with their own flair in the kitchen, will be the starred chefs Isa Mazzocchi and Daniele Repetti, coming from Piacenza, and the Reggio Emilia chefs Gianni D’Amato and Andrea Incerti Vezzani, the latter a Michelin star. The world of haute patisserie will instead be represented by chef pâtissier Claudio Gatti.
The most awaited figure of the “Cena dei Mille” is that of Norbert Niederkofler, “cooking mind” of the “St. Hubertus”, at the Hotel Rosa Alpina in San Cassiano: here was born the ethical and sustainable philosophy known as” Cook The Mountain “. Niederkofler, in the Olympus of the ten Michelin stars in Italy, will ideally gather the baton of Carlo Cracco, great protagonist in 2018: on the occasion of the “Cena dei Mille”, chef Norbert Niederkofler will sign the dessert.
The complete menu of the “Cena dei Mille” will be revealed shortly: for now, the chefs of Parma Quality Restaurants (who will take care of the first and second courses) and of Chef To Chef (who will sign the appetizer) have simply wanted to anticipate that the fil rouge will be the rediscovery of the tastes of the Parma gastronomic tradition.
The aperitif of the “Cena dei Mille” has no secrets instead: appetizers and finger food based on the excellence of the Emilian Food Valley, from Prosciutto di Parma DOP to Parmigiano Reggiano DOP, from tomato to anchovies, from pasta to milk and to dairy products.Thanks to the collaboration of Destinazione Turistica Emilia, the guests of the “Cena dei Mille” can also enjoy typical products from the territories of Piacenza and Reggio Emilia.
CAs anticipated, the “Cena dei Mille” will finance the projects of Emporio Solidale Parma: a reality born in 2010, from the joint effort of a dozen associations, which today lives thanks to the voluntary commitment of sixty people and generosity of businesses and private citizens. In 2018 Emporio Solidale Parma helped 1,070 families, for a total of over 3,000 people, located throughout the province of Parma: every day Emporio Solidale Parma guarantees 9,000 meals and distributes basic foodstuffs.
