DESCRIPTION OF THE EXPERIENCE
08.45 am: Departure from Parma townsquare towards the so called Lowlands.
09.15 – 10.30 am: Meeting on site with a local host and visit an authentic cheese dairy of Parmigiano-Reggiano PDO of the Lowlands of Parma.
We have selected a historical producer, one of the few of the Consortium that has the full production cycle: grass – cows – milk – cheese and the Organic Certification. Discover how the King of all cheeses is made in the same way since centuries ago whren the Benedectine monks invented it. You’ll see the making of it by hands, the salt pools and the wheel cathedral, a big ageing room real walls of cheese: sometimes up to 20.000 in the same place!
11.00/11.15 am: visit to a unique farm with own fruit and vegetable cultivations and own breeding of an ancient type of black pigs. You will learn how the real farm to table concept works!
To follow: be welcome at Antica Corte Pallavicina, a medieval court where you’ll admire a brand new Museum of Culatello di Zibello PDO.
Learn about the history and the making of this amazing product in a dedicated educational room and then go discover the aging cellars dating back to the XIII century, where the king of the cured meats Culatello di Zibello PDO rests for years. People like Prince Charles of England and Prince Alberto of Monaco have discovered this hidden secret and felt in love with it!
If you feel like it follow the final open-air path called Po Forest along the banks of Po river with various points of environmental interest.
Tasting session/lunch at the end of the visit with a large selection of farm products including: Culatello di Zibello PDO, Salame Gentile, Strolghino di Culatello, lard and Cotto Spigaroli (cooked ham), giardiniera (pickled vegetables), homemade focaccia, all this paired with 2 different wines: dry Lambrusco and Fortana del Taro.
01.30 pm: Transfer to Busseto, the town of Giuseppe Verdi, for a guided visit of the amazing little theatre dedicated to this amazing composer.
To follow: free time for a stroll in this typical charming little town of the Lowlands of Northern to discover its tiny food delis and its hidden corners.
03.00 pm: End of activities and back to Parma. (estimated arrival at 03.30 approx).
