Housed within the walls of the mighty Compiano Castle, in what was once the house of Edmondo, butler of the Marchesa Gambarotta, the Al Panigaccio Restaurant welcomes you with traditional cuisine and typical dishes of the Alta Val Taro and the surrounding areas.
The restaurant’s specialty is panigacci: a type of poor bread typical of Lunigiana, a simple mixture of water, flour and salt cooked in a special terracotta mold, the testo, and red-heated over the fire. Panigacci go perfectly with local cured meats as well as with Parmigiano Reggiano and fresh cheeses, or they can be tasted boiled with basil pesto, with a delicious Borgotaro mushroom sauce or simple with oil and Parmesan. On the menu there is no shortage of traditional Parma first courses, torta fritta and homemade desserts. Another Al Panigaccio specialty is the braceria: the best cuts of meat prepared on the grill to be enjoyed with delicious side dishes.
