The Stendhal Restaurant has been a historic restaurant in Parma for over 70 years, located in Sacca di Colorno, on the banks of the Po river.
It is currently run by the Ambrosini family who offers traditional cuisine with the passion of the previous masters.
The Chef Francesco Ambrosini, Ligurian by birth but Parmesan by adoption, falls in love with this strip of land and now, together with his companion Eugenia, extraordinary hostess, welcomes you to take you on a journey to discover new and ancient flavors.
Francesco is heir to the cuisine of masters such as Angelo Paracucchi and Mauro Ricciardi. After the important experiences in the restaurants of La Spezia and Versilia he arrived in Emilia. He likes to remember the great emotion in 2011 for his victory in the competition of “La Prova del cuoco”, the gastronomic column of RAI UNO, called “The Italian bell tower”. Here Francesco won the competition by presenting himself as a representative of the traditional and innovative cuisine of Emilia Romagna.
Former member of the “LES DISCEPLES DES AUGUSTE ESCOFFIER” association and Prefect for Emilia of the Italian Historical Gastronomy Association, Francesco retains within himself the strength of tradition and the desire to innovate.
