Parma is preparing to welcome Cibus Off, the Cibus off-show scheduled at the Parma Fairs from 7 to 10 May, which will animate Piazza Garibaldi with many events dedicated to food, right in the heart of the first Italian city designated by UNESCO as the Creative City of Gastronomy.
The events of Cibus Off, from May 5 to 13, alternate cultural moments with gourmet moments and moments designed specifically for children, in a common optic of enhancing the Parmesan and Parma food and wine excellences and the agri-food industry chain.
Under the Portici del Grano of Piazza Garibaldi, every day our products will be protagonists of events open to all hosted in some spaces created ad hoc like the Agora, a cozy living room immersed in the life of the city, the temporary restaurant, where every day the local chefs will alternate to prepare lunches and dinners, and the kitchen area, where cooking shows and demonstrations will be hosted. In addition, a space specifically used as a “dispensa” by Cibus Off will host the eno-gastronomic excellences of the territory such as Parmigiano Reggiano, Parma Ham, Pomodoro, Pasta, wine, cured meats, preserves, exposed on large shelves in an artistic and greedy geometry.
An always different program for everyone
In the temporary restaurant every day the chefs of the Parma Quality Restaurants Consortium will cook for the public of Cibus Off the traditional dishes of the Parmesan region revisited according to their creativity and mastery; in addition to tasting their creations you can also attend the choice of ingredients, the preparation and the dish, in short, see live what happens every day in a professional kitchen. The temporary restaurant will also host special dinners, only upon reservation for a fee, organized by ALMA (Wednesday 9 May) and Academia Barilla (Friday 11 May), dedicated to the cuisine of Parma and its modern reinterpretation.
The Agora will instead be home to moments dedicated to the culture of food, to its thousand-year tradition: talk shows, book presentations, “words in the pot” and “dialogues in the kitchen”, moments of in-depth analysis of food-related issues. reflection and discussion on topics ranging from innovation in the culinary field to the history of products, from the properties of some foods to the relationship between art and history.
Giocampus and Madegus will take care of the workshops for children, with the students of some schools in Parma taking part in educational activities aimed at a correct diet and teaching of origin, history, work that is behind a product or a dish .
From May 5 to 13 every day appointments will be repeated regularly and guests and experts are always new, without forgetting the musical moments that will end every day the days between cocktails, cocktails and fun for everyone.
