This species, also known as the Duchy’s turkey, is mostly found in the province of Parma and it is one of the many endangerd species of animals.

It has a size somewhat larger than the other local species and It is characterized by a greyish plumage, devoid of bronze reflections, and by a skin that has an intense white colour. Because of these properties it is often compared to other American and Spanish breeds. It was indeed probably imported by the house of Borbone that introduced it in this area during their domination in Parma.

It is perfect to be baked in the owen or cooked with wine.
