The cheese factory San Pier Damiani was founded in 1964 by seventeen milk producers of small and medium-sized who since then make Parmigiano Reggiano guarding the strict rules to ensure a cheese tradition of excellence, quality and safety. The factory offers the possibility of a guided tour of the hardworking and amazing production of Parmigiano Reggiano. Every day the milk is hand-processed: the cheesemaker personally oversees the delicate stages of production, to be discovered and watched live during the visit. You can finally see how the mass of clot milk is introduced into an iron mold shaped called “the mold”, which will take the form into its distinctive appearance. This is the birth of Parmigiano Reggiano.
